RECIPE #1: Lemon Chicken and Veggies




This Lemon Chicken and Veggies recipe was not only super easy to make but is also very healthy. It is super easy to cook ahead of time and reheat for quick meals later in the week. All you need are a few chicken breasts, your favorite veggies, olive oil, a lemon, garlic, and your favorite seasonings. Cooking all of the veggies on a single pan in the oven makes this recipe extremely easy. Firstly, combine olive oil, lemon juice, garlic and seasonings to create a marinade for the chicken. While the chicken is marinading, you can start on the veggies. If you want the chicken to be even more flavorful, you can marinade it a few hours ahead of time but I found that it was flavorful enough with just the time it took to prep the veggies. Cut the veggies up and coat with olive oil, lemon juice and seasonings, then let the oven do the work! The seasonings I used were lemon pepper, paprika, garlic powder and salt. I used potatoes, onions and broccoli for my veggies and cooked them at 350 degrees Fahrenheit for about 30 minutes.  I think zucchini also would have worked well with this recipe. After the veggies were in the oven, I found using an air fryer to cook the chicken was the easiest and quickest way. You can also cook the chicken in a pan on the stove or even on the same tray as the veggies in the oven! Using the air fryer, cook the chicken at 370 degrees Fahrenheit for 18 minutes, flipping the chicken half way through. The prep time for this recipe was very minimal, leaving lots time for homework while the food is cooking! I love that I can make large amounts of this recipe because it reheats very well for meals later on. Hope you enjoy!
